Broccoli Latkes

Was out of 3-pepper mix and found chopped Broccoli so used it instead.

They turned out great!  I add a cup of shredded cheese so you could smell Broccoli-Cheese.

 

Current recipe is:

  • Package of Loaded Mash Potatoe instant mix
  • 1-1/3 LB of frozen shredded potatoes
  • 6 OZ of frozen vegetables  
  • 1 cup shredded cheese (any variety) Mozzarella is my favorite
  • 2 Eggs
  • ½ cup Half-N-Half milk
  • ½ cup olive oil
  • Turmeric, Garlic Sault, and Seasoning to taste

 

Mix all dry and frozen ingredients first and completely mix and allow frozen potatoes and veggies to thaw for an hour.

This allows Mash Potatoes to absorb the moisture then add eggs, Half-N-Half, and mix completely.

Add Olive oil and continue mixing until regular consistency.

 

Spray pan with olive oil and measure each Latke.

Bake at 425° for 25 min
